New cookbook marks first anniversary of EMA’s ‘small-plate’ restaurant

Travellers who enjoyed tasty dishes in East Midlands Airport’s Proof 65 bar this summer can now re-create their culinary experiences thanks to the launch of a new cookbook featuring the bar and restaurant’s most popular dishes.

The cookbook is for the amateur home chef making it easy to create delicious but simple plates which are guaranteed to impress friends and family.

Proof 65 was launched in summer 2018 as an alternative to more traditional airport food outlets. The bar and restaurant specialises in quality small plate dishes and serves a wide selection of gins. Among the 15 different gins available is local favourite Burleigh’s, from the Loughborough-based distillery.

Proof 65, operated by MAG (Manchester Airports Group), is unique to East Midlands’ passengers. It sits alongside the group’s portfolio of airport lounges. With views over-looking the airport’s main passenger airfield, the light, airy and modern interior is more reminiscent of an upmarket high-street eatery than what is normally found in airports.

The menu is the brainchild of MAG’s executive development chef Andy Jackson who has over 33 years industry experience. Andy joined MAG two years ago, tasked with developing the food and drink range of the 1903 lounge at Manchester Airport.

Recipes in the book include those for dishes such as

  • glazed baby back pork ribs
  • salmon fish cakes
  • halloumi with gin and beetroot puree sliders

Matt Etchells, Hospitality Services Director (MAG) says: “Proof 65 at East Midlands Airport has been a big hit with passengers as it offers them something not often found elsewhere. With a bespoke menu all cooked and prepared in-house and a fantastic range of beverages, the restaurant is the ideal place to relax and unwind. Building on the success of our first year, we’re delighted to be launching a cookbook with recipes from some of the dishes that passengers have enjoyed over the past year.”
